Those ends can be found at any place that sells or makes up hydraulic hoses. I have a guy down the road that rents equipment and sells tractors, for instance, and he has these sorts of fittings, both male and female.

I've been to every farm machinery and farm store within an hour of me and everyone tells me the ends are discontinued

You can get hoses with JIC female ends and screw all new available ends into the hoses etc. to make your set up work. Your picture shows a male JIC to male JIC joiner screwed into your old quick connect fitting. Just make sure you buy the female quick connect along with the proper male quick connect ends so they fit together.
Call a machine shop or such and ask them if they have hose and fitting and can help you out. You don't need to necessarily go to a farm machinery or store outlet.
