I'm not talking about a museum piece, but after a decent restore on a tractor, does anyone still use them for farming? or just for show?

I would. I might tend to baby it a little but if you can't enjoy it what's the point? I won't use my bolens in the winter anywhere that's been salted, but I think nothing of pulling a plow or harrow with it or using the shredder on the front.

I bought my cub after a partial restoration, I use it to mow and do some other stuff. I intedn to use any piece of equipment as long as its economical, safe, and not too labor intensive to do so, even after restore.

I think a tractor was meant for work --- good paint, great.... but I think it is truly most happy when it is mucking around with a nice set of AG tires ripping up the soil.
